03 - 2 tablespoons mayonnaise
04 - 1 teaspoon Dijon mustard
05 - 1/2 teaspoon garlic powder
06 - 1/4 teaspoon smoked paprika
07 - 1 jalapeño pepper, seeded and finely diced (plus extra for garnish)
08 - 2 tablespoons cooked bacon, finely chopped (plus extra for garnish)
09 - 2 tablespoons shredded sharp cheddar cheese
10 - 1 tablespoon chives or green onions, finely sliced
11 - Salt and freshly ground black pepper, to taste

# How to Make:

01 - Arrange eggs in a saucepan, cover with cold water, and bring to a boil over medium-high heat. Once boiling, cover and remove from heat. Allow eggs to sit for 10 minutes.
02 - Drain eggs and transfer to an ice bath, allowing them to cool fully. Peel and slice eggs in half lengthwise.
03 - Carefully remove yolks and place in a mixing bowl. Set egg white halves on a serving platter.
04 - Mash yolks with a fork. Incorporate cream cheese, mayonnaise, Dijon mustard, garlic powder, smoked paprika, diced jalapeño, bacon, cheddar cheese, and chives. Mix thoroughly until smooth. Season with salt and pepper.
05 - Spoon or pipe the filling mixture back into the egg white halves.
06 - Garnish with additional diced jalapeño, chopped bacon, and chives as desired.
07 - Refrigerate the assembled eggs until ready to serve.

# Expert Tips:

01 -
  • If you whisper to anyone that these blend creamy smoothness with a sudden jalapeno kick, you'll watch their eyes light up in anticipation.
  • They've become my favorite party dish because there's always an excuse to eat another and nobody can resist asking for the recipe.
02 -
  • Overcooking the eggs can turn the yolks gray—set a timer so they stay perfectly yellow and silky.
  • If you let the cream cheese soften enough, you'll avoid annoying lumps and achieve a filling that's easy to pipe.
03 -
  • Warm eggs peel easier—don't skip the ice bath.
  • Using a piping bag gives a professional swirl, but a spoon works just fine if you're running short on time.
